While the exact blend of ingredients is a closely guarded legacy, these fundamental principles will guide you in achieving a commercial-grade pizza dough in your own kitchen.
Significance of Flour
The base of superior pizza dough lies in premium flour. Our preference is for 00 flour, a finely milled Italian variety with a moderate protein content, about 12%, ensuring an optimal mix of elasticity and softness. If 00 flour is not available, bread flour can be a viable alternative, but be prepared for a slightly altered texture.
Optimal Water Temperature and Dough Hydration
Water's temperature is instrumental in dictating the fermentation duration and the dough's consistency. Use chilled water, around 45°F (7°C), to promote a slow fermentation, yielding a more flavorful dough. Warm water, around 85°F (29°C), will result in a quicker fermentation. Aim for a hydration between 60-70% for optimal results with typical home ovens.
Limited Yeast for Prolonged Fermentation
For a rich-tasting dough, minimizing yeast use and maximizing the fermentation period is key. A mere 0.2% of fresh yeast regarding the flour quantity allows us to let the dough ferment for a period ranging between 24 to 48 hours. This lengthy duration enables a depth of flavor to emerge, along with a more digestible dough.
Role of Salt Beyond Taste
Salt serves not only to flavor the dough but also to reinforce its gluten structure and regulate fermentation. We suggest a proportion of fine sea salt between 2.5 to 3% of your flour weight. Introduce it when the flour and water commence integration, averting direct contact with the yeast.
Fermentation Mastery
Post-mixing, leave your dough to bulk ferment at a comfortable room temperature for 2 hours, thereafter portion it into balls. Store these in lidded containers and refrigerate for a span of 24-72 hours. Such cold fermentation period is where notable transformation occurs—enzymes decompose the starches into fermentable sugars, enhancing the flavor and contributing to the crust's golden hue.
Delicate Dough Handling
Prior to pizza creation, extract the dough from the cold about 1-2 hours in advance to allow it to reach room temperature. Handle it with care to maintain the developed air pockets. Rather than rolling it out, employ a gentle touch, pressing and stretching with your fingertips.
Heat: The Concluding Stroke
Our pizzas are baked in wood-fueled ovens that achieve an impressive 850°F (454°C), a temperature generally unattainable in home settings. To adapt to household ovens that peak at roughly 550°F (288°C), it's advisable to use a preheated pizza stone or steel, ensuring the dough receives the intense heat required to form a crunchy crust and a light interior.
